What I like About This Recipe?

This recipe is very flexible, you can either bake this or grill. It’s all depends on what you want to do. Unlike me, I pretty much grill inside using my Iron Griddle especially during winter. The reason for that is because our main grill is broke and for now I decided not to buy new one since I have my griddle. This kind of starter is always a hit in our family, I’d say anything with seafood just doesn’t last long on the table at all.

Ingredients

  • 1 lb. shrimp

  • 5 large Portabella mushroom caps

  • 1 ½ cup pistachios, chopped

  • 1 cup Asiago cheese

Directions

  • Prepare shrimp. Chop half into smaller bite size pieces.
  • Combine Asiago cheese and panko crumbs in a bowl.
  • Chop pistachios.
  • Fill mushroom caps with shrimp, top with cheese and panko mixture, and
    cover with pistachios.
  • Bake 350° for 15-20 minutes or place on BBQ grill until shrimp is cooked
    thoroughly and cheese is melted
  • Serve with a hard cheese, such as Merlot

Notes

  • You can cook this in the oven or grill.
